American Hotbox has taken whole hog roasting to the extreme. Simplified product, less parts, stainless steel for strength and longevity, no bolts, all handles welded, roasting chamber one solid unit so no leaks or possibility of leaks, and for ease of clean up. The American Hotbox takes catering to a whole new level as well. The American Hotbox does: roasting, grilling, frying, baking, cold smoking, hot smoking, rotisserie. It is so versatile it can do most operations required for a catering event that cost upwards of $20k to $30,000.00.

ROASTER AND GRILL

American Hotbox Roasting System: The American Hotbox is similar to a Dutch oven in its function and also much like a convection oven. It has the charcoal on top and radiates the heat to the bottom of the box via an ash pan on the top. The ash pan collects the ashes from the charcoal but at same time is the cooking surface. While it heats the box like a superheated oven for roasting it can also broil/braise by using the coals on the top and radiating superheat down below.

HEAT ON TOP

The American Hotbox cooks with charcoal on TOP. The charcoal is deep red because it is over 790fh.

DUELING PIGS

Whole 100lb roasting pigs one in each box. The most succulent pigs are produced in this manner.

WHOLE ROASTED HOG

The pig is roasted upside down for 3 hours then 1 hour on its belly.

SWINE LIVING

The Hotbox is roasting the pig but in the last hour it actually braises the top for crunchy skin.

ASH PAN

The specially designed ash pan. Features one piece construction and TIG welded. Corner construction reinforced and internal construction reinforced to prevent bowing and material expansion due to heat. Special “Caution Hot” sign laser cut.

The ash pan has been designed with a wind break right into the cooking portion. Less pieces more precise. The wind break allows you to cook with heavy winds outside and not burn the pig or blow hot ashes while in use. A rotisserie attaches to the wind break.

Notice the handles are triangular and also include a witches hat at the top. Specially designed so that you do not get burnt while working with the ash pan and charcoal grate. Welded in so that no possibility of failure while handling the hot ash pan.

CAUTION HOT:

We have laser cut “Caution Hot” into the ash pan due to so many event attendees trying to touch the coals or put their hands in the ash pan. With the wind break built in and the words emblazoned into the ash pan it is more difficult to reach up and in.

The ash pan dimensions are 45 long 24 wide and 6 inches deep. Made with .024 stainless steel.

ROASTING CHAMBER

This roasting chamber or the internal tub is made from solid stainless steel. Edges rolled and TIG welded for strength. Designed with no drain to ensure guaranteed no leaking.

All edges are rolled to ensure safety. The box dimensions are 44 x 24 x 16. There are two port built into the Roasting Chamber. One port for the Smoke Pistol and one port for the Teppecue Thermometer unit used for tracking temps on 4 different probes.

Notice the handles are triangular and integrated into the chamber. Welded in place so removal can never occur and to ensure they do not get lost. The handles were built in to allow easy removal and cleaning of the chamber.
